These Vanilla Amaretto Figs are a luxurious celebration of late-summer sweetness. Fresh California Mission figs are gently steeped in a fragrant syrup of Amaretto, vanilla, and sugar, creating a rich, boozy preserve that’s elegant and deeply aromatic. Each fig becomes tender and honeyed, infused with nutty almond liqueur and warm vanilla—perfect spooned over desserts, paired with cheese, or enjoyed straight from the jar. A beautiful way to savor the fleeting fig season.
INGREDIENTS:
12 fresh California Mission figs, washed and dried
1 vanilla bean, split and opened
1 cup Amaretto liqeuer
1 cup filtered water
1 cup sugar
METHOD:
Cut each fig in half lengthwise. Arrange the halves, cut side up, in a large, wide-mouth glass canning jar. Lay the split vanilla bean on top. Set aside.
In a medium saucepan, combine the Amaretto, water, and sugar. Bring to a gentle boil over medium-high heat, stirring until the sugar dissolves. Continue to boil for 5 minutes, or until the mixture reduces slightly and takes on a light syrupy consistency.
Remove the syrup from heat and let it cool for about 10 minutes. Place the jar with figs on a folded kitchen towel (to prevent cracking). Carefully pour the warm syrup over the figs, covering them completely.
Seal the jar tightly and allow it to cool to room temperature. Refrigerate overnight to allow the flavors to meld.
Keep refrigerated and enjoy within 4–5 days for best flavor and texture.
