Fragrant Yogurt Chicken for a Crowd

Planning a summer gathering? This Fragrant Yogurt Chicken for a Crowd is a perfect choice for feeding a large group with ease and flavor. Marinated in spiced Greek yogurt infused with garlic, lime, and warm Middle Eastern aromatics, the chicken turns out exceptionally tender, juicy, and deeply seasoned. Grill it just before serving and pair with roasted or grilled vegetables, warm pita, and cool tzatziki for a vibrant, crowd-pleasing meal that’s perfect for backyard parties, potlucks, or casual family dinners.

INGREDIENTS:

20 (6 oz) boneless, skinless chicken breasts
1 quart nonfat plain Greek yogurt
1/4 cup garlic minced
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons ground ardamon
1/4 cup freshly squeezed lime juice
1/4 cup olive oil
Salt, to taste

METHOD:

In a large mixing bowl, whisk together the Greek yogurt, garlic, coriander, cumin, cinnamon, cayenne, cardamom, lime juice, olive oil, and salt until smooth and well combined.

Trim any excess fat from the chicken breasts. Add them to the marinade and turn to coat evenly. Cover and refrigerate for at least 4 hours, or up to overnight for maximum flavor.

Preheat a grill to medium heat (about 375°F). Remove the chicken from the marinade, letting excess drip off. Grill for 5–7 minutes per side, or until the internal temperature reaches 165°F and the chicken is golden with slight char marks.

Let rest for 5 minutes, then slice into 1-inch strips. Serve warm with grilled vegetables, pita bread, and tzatziki for a complete meal.

SERVING SUGGESTIONS:

  • Add a side of tabbouleh, hummus, or cucumber salad for a Mediterranean-style spread.

  • Leftovers make great wraps or grain bowls the next day.

YIELD: 20 servings
