Sweet meets heat in this bold and versatile marinade. Honey balances the savory depth of soy sauce and the fiery kick of chili sauce, while ginger and mustard add a warm, zesty note. A drizzle of chili oil (or a pinch of red pepper flakes) turns up the spice, making this the perfect glaze or marinade for chicken, pork, beef, or even grilled vegetables. Use it to marinate ahead of cooking or brush it on as a basting sauce for a glossy, flavorful finish.
INGREDIENTS:
1/4 cup honey
1/4 cup soy sauce
1/4 cup chili sauce
1/4 teaspoon ginger
1/4 teaspoon dry mustard
1/2 teaspoon hot chili oil (or 1/4 teaspoon red pepper flakes)
METHOD:
In a small bowl, whisk together all ingredients until smooth and well combined.
To marinate: Place chicken, pork, beef, or vegetables in a resealable bag or shallow dish. Pour marinade over, turning to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for fuller flavor.
To baste: Reserve a small portion of marinade before adding it to raw meat. Brush onto food during the last few minutes of grilling or roasting.
Tip: For extra depth, add a squeeze of fresh lime juice just before serving.
