Fresh Pineapple Citrus Salsa

This Fresh Pineapple Citrus Salsa combines the best of fruit and salad in one colorful, flavor-packed dish. Sweet pineapple, juicy tomatoes, and crisp cucumber come together with a bright kick of lime and a touch of heat from jalapeño. It’s wonderfully versatile — serve it as a tropical condiment with grilled pork, chicken, or duck, or enjoy it as a zesty topping for fish tacos. You can even swap in peaches, nectarines, or plums for a seasonal twist.

INGREDIENTS:

1/2 pineapple, cut into 1/4-inch pieces
2 medium tomatoes, diced
1 small cucumber, seeded and diced
2 shallots, minced
1/2 jalapeño chile, minced
1/4 cup cilantro, minced
2 tablespoons lime juice
1 tablespoon white wine vinegar
1 tablespoon vegetable oil
1/2 teaspoon salt

METHOD:

Dice the pineapple, tomatoes, and cucumber into uniform pieces for even texture. Mince the shallots, jalapeño, and cilantro.

In a medium mixing bowl, combine pineapple, tomatoes, cucumber, shallots, jalapeño, and cilantro.

Drizzle in lime juice, white wine vinegar, vegetable oil, and sprinkle with salt. Gently toss until everything is evenly coated.

Cover and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled or at room temperature. (Do not chill for longer than an hour, as the fresh pineapple’s natural enzymes will begin to break down the other ingredients.)
