Zesty Cilantro Lime Rice

Bright, fresh, and zesty, this Cilantro Lime Rice is the perfect side dish to elevate any meal. Fluffy basmati rice is infused with garlic and lime zest, then finished with fresh lime juice and chopped cilantro for a burst of flavor in every bite. It pairs beautifully with Mexican favorites like tacos, fajitas, or grilled shrimp, but is just as delicious alongside Asian-inspired dishes or simple grilled meats and vegetables. This versatile rice is a quick, crowd-pleasing way to add color and flavor to your table.

INGREDIENTS:

2 tablespoons olive oil
1 1/2 cups basmati long grain white rice
1 clove garlic, minced
2 1/4 cups water
1 teaspoon salt
Zest of one lime
3 tablespoons fresh lime juice
1 cup lightly packed chopped cilantro, leaves and tender stems

METHOD:

In a medium saucepan with a lid, heat olive oil over medium-high heat. Add the rice and stir to coat. Cook, stirring occasionally, until the grains turn lightly golden and give off a nutty aroma, about 3–4 minutes.

Stir in the garlic and cook for 30 seconds, just until fragrant. Add the water, salt, and lime zest. Bring to a rolling boil, then cover and reduce heat to low. Simmer for 15 minutes.

Remove the pan from heat and let the rice sit, covered, for 10 minutes.

Fluff the rice with a fork. Transfer to a serving bowl, drizzle with lime juice, and fold in the chopped cilantro.

Enjoy hot with steak, chicken, fish, shrimp, or any Asian or Mexican-inspired meal.
