Lemon-Ginger Salad Dressing

Bright, zesty, and full of fresh ginger, this versatile dressing brings lively flavor to winter greens. Its balance of lemon, tamari, garlic, and mustard makes it especially good on sturdy salads like kale, but it’s equally delicious drizzled over steamed broccoli, asparagus, or grain bowls.

INGREDIENTS:

3/4 cup extra virgin olive oil
1/2 cup fresh lemon juice
1/3 cup tamari or soy sauce
1/4 cup water
2 cloves garlic, finely minced
1 1/2 tablespoons fresh ginger, finely minced
1 teaspoon hot Chinese or Dijon mustard

METHOD:

Place all ingredients in a jar with a tight-fitting lid. Shake vigorously until the dressing emulsifies.

Cover and refrigerate until ready to use. Shake again before serving.

SERVING SUGGESTIONS:

  • Toss with kale, spinach, or mixed winter greens.
  • Drizzle over steamed asparagus, broccoli, or green beans.
  • Spoon over quinoa or rice bowls with roasted vegetables.
  • Use as a marinade for chicken or tofu.
