Melon in Spicy Syrup

This refreshing melon bowl is a crowd-pleaser and perfect for a summer picnic or beach party.

INGREDIENTS:

1 1/2 cups water
1 1/2 cups sugar
1 jalapeno, seeded, cut in half horizontally
1 teaspoon whole cloves
2 large honeydew melons, cut in half and seeded
2 cantaloupes, cut in half and seeded

METHOD:

Combine the sugar and water in a saucepan. Heat until the sugar dissolves. Add the jalapeno and cloves. Remove from heat and let stand until the spices meld, about one hour. Strain syrup and discard jalapeno pepper and cloves.

Using a melon baller, scoop out the flesh of both melons and place melon balls in a large bowl.

Pour syrup over the melon balls and chill. Serve in a lovely glass bowl garnished with mint or flowers. Delicious served as a summer dessert with ginger cookies.
