This versatile recipe is as at home inside delicate ravioli as it is on the holiday table. A mix of spinach, onions, breadcrumbs, and two cheeses creates a creamy, savory bake with a golden crust that everyone loves.
INGREDIENTS:
2 cups cooked, chopped spinach, drained and squeezed dry (okay to use frozen spinach, too)
1 cup bread crumbs or crumbled Ritz cracker crumbs
1 cup onions, finely chopped
1 cup Monterey jack cheese, shredded
1 cup extra sharp cheddar cheese, shredded
1 egg, beaten
Salt to taste
METHOD:
Preheat oven to 350°F.
In a large bowl, combine spinach, breadcrumbs or cracker crumbs, onions, both cheeses, egg, and salt. Mix until evenly blended.
Lightly grease a casserole dish with butter or cooking spray. Spread spinach mixture evenly into the dish.
Bake for about 40 minutes, or until the top is golden brown and set.
Allow to cool slightly before serving as a side dish, or use as a rich filling for homemade pasta such as ravioli.
