This Boursin-style cheese is easy and economical to make and keep on hand for a savory appetizer.
INGREDIENTS:
2 lb. cream cheese, softened
1 lb. butter, softened
2 teaspoons mashed garlic
2 tablespoons chopped sweet marjoram
2 tablespoons chopped chives
1 tablespoon chopped basil
1 teaspoon chopped English or French thyme
1 tablespoon chopped parsley
1 teaspoon salt
1/2 teaspoon freshly ground pepper
METHOD:
Using a stand mixer with a paddle, beat the cheese and butter together until smooth and creamy. Add the mashed garlic to the cheese, mixing well. Add the finely chopped herbs, salt, and pepper and mix until well combined.
Chill slightly and form into logs or pack into ramekins. Wrap tightly in plastic wrap. Refrigerate or freeze.
When ready to serve, allow the cheese spread to come almost to room temperature. Serve with toasted French bread rounds.
