Pimento Cheese Spread

We love the versatility of this spicy spread! Use it as an appetizer with crackers or as a spread for toasted bagels, biscuits, or sandwiches. Want to jazz up your mac and cheese? Stir in a spoonful or two into your favorite recipe.

INGREDIENTS:

2 cups shredded extra-sharp cheddar cheese
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon onion powder
1/2 – 1 jalapeno pepper, seeded and minced (optional)*
1 (4-ounce) jar diced pimento, drained
Salt and black pepper to taste

METHOD:

Place the cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a stand mixer. Beat at medium speed with the paddle attachment until thoroughly combined. Season to taste with salt and black pepper. Pack into a small bowl or jar, cover, and store in the refrigerator. Allow spread to warm slightly at room temperature before serving.

*Be sure to check jalapeno pepper for heat before adding to spread.

* You can also make it in food processor for a more ‘whipped’ and softer spread. Put all ingredients EXCEPT jalapeno and pimento into food processor and process until smooth. Then, stir in remaining peppers.
