This appetizer is full of late-summer flavors and is wonderful served with a glass of wine on a warm evening. Feel free to use several varieties and colors of cherry tomatoes.
INGREDIENTS:
1 (8-ounce) block feta cheese
2 tablespoons extra virgin olive oil
2 cloves garlic, roughly chopped
11 ounces cherry tomatoes, halved
Scant 1/4 teaspoon salt
1/8 teaspoon pepper
Pinch sugar
1 1/2 tablespoons capers, drained
Optional Garnish: Oregano, finely minced
METHOD:
Preheat the broiler. Arrange the oven rack in the top position.
Place the feta cheese in a small, shallow baking dish and set aside.
In a medium saucepan, heat the olive oil over medium heat. Add the garlic and cook, stirring constantly, until fragrant and lightly golden, 1 to 2 minutes. Add the halved tomatoes, salt, pepper, and sugar. Stirring frequently, cook until the tomatoes are softened and starting to burst, 2 to 3 minutes. Remove from the heat and stir in the capers.
Pour the tomato mixture around the feta cheese. Broil until the cheese is softened and browned on top, about 4 minutes — keep an eye on it as broilers vary greatly.
Serve with warm crusty bread or toasted pita bread.
