Roasted Feta with Cherry Tomatoes and Garlic

This simple yet irresistible appetizer captures the essence of late summer—sweet, juicy cherry tomatoes, fragrant garlic, and briny feta cheese meld together under the broiler into a bubbling, golden dish that’s perfect for sharing. The heat softens the feta just enough to make it creamy inside, while the quick-sautéed tomatoes and capers create a tangy, savory sauce that begs to be scooped up with warm bread.

Serve this with a chilled glass of white wine or rosé on a warm evening, and feel free to mix colorful cherry tomato varieties for an eye-catching presentation.

INGREDIENTS:

1 (8-ounce) block feta cheese
2 tablespoons extra virgin olive oil
2 cloves garlic, roughly chopped
11 ounces cherry tomatoes, halved
Scant 1/4 teaspoon salt
1/8 teaspoon pepper
Pinch sugar
1 1/2 tablespoons capers, drained
Optional Garnish: Oregano, finely minced

METHOD:

Position the oven rack in the top third of the oven and preheat the broiler on high.

Place the block of feta in a small, shallow, oven-safe baking dish. Set aside.

In a medium skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1–2 minutes, stirring constantly, until fragrant and just beginning to turn golden. Add the cherry tomatoes, salt, pepper, and sugar. Cook, stirring frequently, for 2–3 minutes until the tomatoes soften and begin to burst. Remove from the heat and stir in the capers.

Spoon the tomato mixture around the feta in the baking dish. Place under the broiler and cook for about 3–4 minutes, watching closely, until the cheese softens and browns lightly on top.

Sprinkle with minced oregano or fresh basil, if desired. Serve immediately with warm crusty bread or toasted pita for dipping.
