Poppy Seed Dressing


1 large egg
1/4 cup honey
1 tablespoon Dijon mustard
2/3 cup red wine vinegar
1/2 teaspoon salt
3 tablespoons yellow onion grated, plus juice
1 cup olive oil
1 cup vegetable oil
3 tablespoons poppy seeds
1 pinch white pepper


In food processor combine egg, honey, mustard, vinegar, salt, grated onion and juice from the grating. Process 1 minute. With motor running drizzle oil in to emulsify. Shut off motor add white pepper and adjust seasoning. Should taste a bit sweet and a bit tart. Add poppy seeds and pulse to combine. Chill.

Use poppy seed dressing for spinach salad or coleslaw.
