Caribbean-Style Mango and Habanero Hot Sauce

Mike Hultquist (www.chilipeppermadness.com) is the expert when it comes to creating tasty spicy condiments with his favorite fruit. This Caribbean hot sauce features fiery habanero peppers, mango, vinegar, honey, allspice, cumin, and ginger flavors. Serve it with grilled chicken, shrimp, fish, or pork tacos.

INGREDIENTS:

5 habanero peppers, chopped
1 ripe mango, peeled and chopped
1 small white onion chopped (about 3/4 cup)
4 cloves garlic, chopped
1/2 cup apple cider vinegar
1/4 cup filtered water
2 tablespoons honey
1/4 teaspoon cumin
1/2 teaspoon allspice
1 teaspoon ginger powder
1 teaspoon salt

METHOD:

To the bowl of a food processor, add all of the ingredients. Process the mixture until smooth.

Add the mixture to a large saucepan and bring it to a boil. Reduce heat and simmer for 10 minutes.

Cool. Decant sauce into individual small sauce bottles or a jar.

YIELD: 30 servings
