Creamy Pistachio Frozen Yogurt

Creamy, tangy, and lightly sweet, this pistachio frozen yogurt is an easy homemade dessert with just a handful of ingredients. Full-fat Greek yogurt gives it a rich, smooth texture, while maple syrup adds gentle sweetness and lemon juice brightens the flavor. Roasted pistachios bring a lovely savory-nutty contrast.

For an extra-special finish, dip or drizzle the frozen yogurt with melted white chocolate. The combination of pistachio, creamy yogurt, and white chocolate makes this simple dessert feel especially indulgent.

INGREDIENTS:

350 g Greek yogurt, preferably 10% fat
30 ml maple syrup
1 teaspoon vanilla extract, or to taste
1 tablespoon fresh lemon juice
40 g shelled pistachios, roasted and salted or unsalted
2 tablespoons milk of your choice
100 g white chocolate, melted (optional topping)

METHOD:

Roughly chop the pistachios, reserving a small amount for garnish if desired.

In a medium bowl, combine the Greek yogurt, maple syrup, vanilla extract, lemon juice, and milk. Whisk until smooth and creamy.

Stir the chopped pistachios into the yogurt mixture.

For the best texture, refrigerate the mixture for about 30 minutes before freezing.

Ice Cream Maker Method
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20–30 minutes, or until thick and softly frozen.
  2. Transfer the frozen yogurt to a freezer-safe container. Cover and freeze for 1–2 hours for a firmer, scoopable consistency.
No-Churn Method
  1. Pour the mixture into a shallow freezer-safe container and freeze for about 1 hour.
  2. Stir the mixture vigorously with a fork or whisk to break up ice crystals. Return it to the freezer and repeat every 30–45 minutes for about 2–3 hours, until creamy and evenly frozen.
Optional White Chocolate Finish

Melt the white chocolate gently in a double boiler or heatproof bowl set over barely simmering water.

For frozen yogurt bars or individual portions, dip or drizzle the firmly frozen yogurt with the melted chocolate. Sprinkle with additional chopped pistachios, if desired, and return to the freezer until the chocolate has set.

To Serve

Frozen yogurt becomes quite firm in a home freezer. Let it stand at room temperature for about 5–10 minutes before scooping.

Recipe Notes

If using salted pistachios, taste the mixture before adding any additional salt—the slight saltiness can be especially delicious with the maple syrup and yogurt.

Full-fat Greek yogurt will produce the creamiest texture. Lower-fat yogurt can be used, but the finished frozen yogurt may be firmer and slightly icier.
