INGREDIENTS :
2 cups ketchup
1 small can tomato paste
1/2 cup packed dark brown sugar
1/4 cup onions, finely minced
3 medium garlic cloves, crushed, then finely minced
4 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon liquid smoke
1 1/2 teaspoons paprika
1 teaspoon cayenne
3/4 teaspoon freshly ground black pepper
1/2 teaspoon salt
1/2 cup water
METHOD:
In a medium saucepan, combine all ingredients and stir to mix well.
Place over medium heat and bring to a gentle boil, stirring frequently to prevent sticking.
Reduce heat to low and simmer, uncovered, for 30–40 minutes, or until the sauce has thickened enough to coat the back of a spoon. Stir occasionally.
Remove from heat and let cool to room temperature.
Use immediately, or transfer to a covered container and refrigerate for up to 2 weeks.
Tip: For a smoother sauce, blend it with an immersion blender before cooling.
