Creamy Avocado Dressing

What we like about this creamy avocado dressing recipe is its versatility — with a few simple changes, you have an entirely ‘new’ dressing. Ripe avocados add a healthy richness and eliminates the need to use mayonnaise or additional oil to make it creamy.

INGREDIENTS:
1 ripe avocado
6 tablespoons extra virgin olive oil
6 tablespoons sour cream or yogurt (unsweetened Greek or plain yogurt)
4 tablespoons lemon juice
1-2 garlic cloves, minced
6-8 tablespoons water, or as needed to thin the dressing
1 teaspoon salt
1/2 teaspoon black pepper

METHOD:
Place all ingredients in a heavy-duty blender (or food processor) except water and process until the mixture is smooth and creamy. Add water (as needed) to thin it to desired consistency.

The dressing will keep for 3 days in the refrigerator.

VARIATIONS:
Fresh Herb Dressing: Stir in 1/2 cup of mixed minced herbs of your choice, such as parsley, cilantro, chives, or dill

Southwestern: Replace lemon juice with lime juice. Stir in 1/3 cup cilantro leaves, 3 tablespoons finely minced red onion, and 1/2 teaspoon toasted cumin power.

Ranch Style Dressing: Add 1/2 teaspoon EACH of dried dill, parsley, chives, onion powder, garlic powder, and 1 teaspoon of sugar

Greek Dressing: Add an additional 1 tablespoon of lemon juice and 2 teaspoons of dried oregano

Italian Dressing: Add a small handful of fresh basil leaves and process with other dressing ingredients until smooth. Stir in 1 teaspoon of dried Italian herbs.
