If you like Ranch dressing, you’ll love this dressing. Use it for a summer salad of greens, roasted corn, black beans, red onions and grilled chicken. Or, use it as a dip with fresh veggies.
3/4 cup mayonnaise
3/4 cup Greek yogurt
2 tablespoons freshly-squeezed lime juice
2 tablespoon olive oil
1/3 cup buttermilk (or regular milk)
1/3 cup (packed) fresh cilantro leaves
2 tablespoons fresh chives, roughly chopped
2 cloves garlic, peeled and roughly chopped
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
Place all ingredients in a blender jar and process for 30 seconds. Scrape down sides and blend an additional 30 seconds. Store in an airtight jar in the refrigerator.
YIELD: 1 1/2 cups
