INGREDIENTS:
2 tablespoons oyster sauce
2 tablespoons chicken broth
1 tablespoon dry sherry
1/2 teaspoon sugar
1/2 teaspoon toasted sesame oil
2-3 bunches broccolini
1 tablespoon salt
1 tablespoon peanut oil
METHOD:
In a small saucepan, combine oyster sauce, chicken broth, sherry, sugar, and sesame oil. Bring to a boil and stir or whisk until the sauce thickens. Remove from heat.
In a large pot, bring 3 to 4 quarts of water to a boil. Add salt and peanut oil. Add broccolini and cook for 3 minutes, until tender and crisp. Drain immediately in a colander and shake off excess water.
Place on a warm platter and drizzle sauce over broccolini.
YIELD: Makes 4-6 servings
