This is a cool and very refreshing salad for picnics or warm summer evenings.
INGREDIENTS:
1 (5-pound) seedless watermelon, chilled
1 sweet Vidalia or red onion, peeled
1/4 cup red wine vinegar or freshly squeezed lime juice
Salt and pepper
1/2 cup extra-virgin olive oil
2 tablespoons fresh mint, chopped
2 tablespoons flat leaf parsley, chopped
4 ounces feta cheese, crumbled into large pieces
6 whole mint sprigs
METHOD:
Cut the flesh from the watermelon and cut into bite-size chunks, removing and discarding any seeds, and set aside.
Cut onion in half, and slice into very thin half moons.
In a small bowl, combine the vinegar or lime juice, salt, and pepper, and whisk until the salt is dissolved. Whisk in the olive oil slowly, a few drops at a time. Mix in the mint and parsley. Taste and adjust seasonings.
In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss very gently until evenly mixed.
To serve, divide the salad among individual plates and garnish with mint leaves.
