INGREDIENTS:
2 ounces cream cheese, softened
1/2 medium avocado, mashed
2 teaspoons fresh lemon juice or rice vinegar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh herbs, such as parsley, dill, and/or basil
2 whole-wheat tortillas (8-inch)
1/2 cup shredded cooked chicken
4 tablespoons shredded carrot
12 thin cucumber slices
1 cup mixed salad greens
METHOD:
In a small bowl, stir together the cream cheese, mashed avocado, lemon juice or vinegar, salt, and black pepper until smooth. Fold in the fresh herbs until evenly combined. Spread the green goddess mixture evenly over the tortillas.
Divide the chicken, shredded carrot, cucumber slices, and mixed greens between the tortillas.
Roll each tortilla tightly like a burrito, folding in the sides as you roll.
Slice in half and serve immediately, or wrap tightly for lunches on the go.
