Mint-Cucumber Mojitos

Cool cucumber, fresh mint, and bright lime make this refreshing mojito variation especially welcome on warm afternoons and summer evenings. Light, crisp, and incredibly easy to make, this drink captures the feeling of relaxing outdoors with friends while garden herbs and cucumbers are at their peak.

The cucumber adds a subtle cooling quality that pairs beautifully with mint and sparkling club soda, creating a cocktail that feels both classic and fresh. It’s equally delicious as a non-alcoholic mocktail, making it perfect for gatherings where everyone can enjoy a glass.

INGREDIENTS:

1 lime, quartered
2 sprigs fresh mint leaves
1 tablespoon white sugar
2 cucumber slices
6 ice cubes, or as needed
2 ounces white rum, such as Bacardi®
4 ounces club soda

METHOD:

Squeeze the lime quarters into a highball glass, then drop the lime pieces into the glass.

Add the mint leaves and sugar. Using a muddler or the back of a wooden spoon, gently muddle the mixture to release the mint oils and dissolve some of the sugar.

Add the cucumber slices and fill the glass with ice.

Pour in the rum and top with club soda. Stir gently to combine and serve immediately.

Non-Alcoholic Version: For a refreshing alcohol-free mocktail, omit the rum and substitute 1 teaspoon rum flavoring. Top with additional club soda or sparkling water to taste.

SERVING SUGGESTIONS:
Garnish with extra cucumber slices, lime wheels, or fresh mint sprigs. This drink pairs beautifully with grilled seafood, tacos, summer salads, and backyard barbeques.

NOTES:
A pitcher can easily be prepared a few hours ahead of time by combining the lime, cucumber, mint, sugar, and club soda. Add the rum and ice just before serving for the freshest flavor. Here’s the pitcher sized recipe:

2 limes, quartered
8 to 10 sprigs fresh mint leaves
1/4 cup white sugar
1/2 English cucumber, thinly sliced
3 cups ice cubes, or as needed
8 ounces white rum, such as Bacardi®
16 ounces club soda, chilled

In a large pitcher, squeeze the lime quarters into the pitcher, then drop the lime pieces into the pitcher. Add the mint leaves and sugar. Using a muddler or wooden spoon, gently muddle to release the mint oils and help dissolve the sugar. Add the cucumber slices and stir gently.

Fill the pitcher with ice cubes. Pour in the rum and chilled club soda. Stir gently until well combined. Serve immediately over additional ice if desired.

NOTE: For the best flavor, allow the cucumber, lime, mint, and sugar mixture to rest for about 10 minutes before adding ice and club soda. This helps the flavors blend beautifully without becoming overpowering.
