Cucumber Bites with Smoked Salmon

These elegant cucumber bites are one of those timeless appetizers that always disappear quickly from the table. Crisp cucumber cups filled with creamy dill cheese and topped with silky smoked salmon create the perfect balance of freshness, richness, and bright herbal flavor.

They feel equally at home at summer garden parties, brunches, holiday gatherings, or afternoon picnics, yet they come together with surprisingly little effort. The cool crunch of cucumber makes a refreshing contrast to the smoked salmon, while lemon and fresh dill keep everything tasting light and vibrant.

INGREDIENTS:

24 cucumber slices, about 3/4-inch thick
4 ounces cream cheese, softened
2 tablespoons chopped fresh dill
1 teaspoon lemon zest
1/2 teaspoon fresh lemon juice
1/4 teaspoon ground black pepper
4 ounces smoked salmon, cut into small strips
24 small fresh dill sprigs

METHOD:

Using a melon baller or small spoon, scoop a shallow depression into one side of each cucumber slice to create a small cup, being careful not to scoop all the way through.

Arrange the cucumber cups scoop-side down on paper towels and allow them to drain for about 15 minutes. This helps remove excess moisture and keeps the filling fresh and creamy.

In a small bowl, combine the cream cheese, chopped dill, lemon zest, lemon juice, and black pepper. Stir until smooth and well blended.

Spoon about 1/2 teaspoon of the dill cream mixture into each cucumber cup.

Top each with a strip of smoked salmon and garnish with a small sprig of fresh dill.

Chill until ready to serve.

SERVING SUGGESTIONS:
These bites make an elegant appetizer for brunches, cocktail parties, holiday gatherings, and summer entertaining. Serve alongside sparkling wine, crisp white wine, or cucumber-infused sparkling water.

NOTES:
These can be assembled up to 24 hours ahead and stored chilled in an airtight container. Smoked trout also works beautifully in place of smoked salmon. For a lighter version, reduced-fat cream cheese may be substituted.
