Ingredient Note: Cacao powder and unsweetened cocoa powder can be used interchangeably in this recipe. Cacao powder is less processed and retains slightly more antioxidants, while cocoa powder offers a richer, more traditional chocolate flavor.
Basic Nut Truffles
INGREDIENTS:
1/4 cup raw pepitas
1/2 cup raw almonds
1/2 cup raw walnuts
1 tablespoon cacao powder
1 tablespoon chia seeds
1/2 teaspoon sea salt
1/4 teaspoon vanilla paste
12 Medjool dates, pitted
1/2 cup almond butter
METHOD:
Place the pepitas, almonds, and walnuts in a food processor. Process until finely chopped but not completely smooth.
Add the cacao powder, chia seeds, and sea salt. Pulse a few times to combine.
Add the dates and pulse 10–15 times until they are broken down and incorporated into the nut mixture.
Add the almond butter and vanilla paste. Continue processing until a dough forms. The mixture should hold together when pinched between your fingers. If it seems too dry, add a little more almond butter.
Transfer the mixture to the refrigerator for 10 minutes to firm slightly.
Using about 1 tablespoon of dough per truffle, roll into balls.
Return the truffles to the refrigerator for 5–10 minutes to firm before serving.
STORAGE:
Store in an airtight container in the refrigerator for up to 3 weeks. For longer storage, freeze for up to 3 months.
VARIATIONS:
Cashew Orange Nut Truffles
A bright citrus version with hints of orange and vanilla.
Additional Ingredients & Changes
- Substitute raw cashews for the walnuts
- Omit the cacao powder
- Add 1 tablespoon maca powder
- Add 1/3 cup chopped raw cacao butter
- Use 14 Medjool dates
- Add 1/4 teaspoon orange oil
- Increase vanilla paste to 1/2 teaspoon
Chocolate Peanut Nut Truffles

- Substitute almonds for the walnuts
