Cucumber-Mango Salsa

Sweet ripe mango, crisp cucumber, lime, and fresh jalapeño come together in this bright, refreshing salsa inspired by Caribbean flavors. It’s the kind of dish that instantly feels like summer — colorful, vibrant, and perfect for sharing at picnics, cookouts, or relaxed afternoons outdoors.

The cool crunch of cucumber balances the sweetness of the mango beautifully, while cilantro, garlic, and lime add freshness and depth. After a short rest in the refrigerator, the flavors meld into a salsa that pairs wonderfully with grilled fish, shrimp, chicken, tacos, or simply a bowl of tortilla chips.

INGREDIENTS:

3 ripe mangos, peeled, seeded, and diced
1 large onion, finely diced
1 English cucumber, peeled, seeded, and diced
2 jalapeño peppers, seeded and finely chopped
1/4 cup chopped fresh cilantro
1 garlic clove, minced
1 tablespoon fresh lime juice, or to taste
Salt and freshly ground black pepper, to taste

METHOD:

Combine the diced mangos, onion, cucumber, jalapeños, cilantro, and garlic in a large mixing bowl. Add the lime juice and season with salt and black pepper to taste. Toss gently until evenly combined.

Cover and refrigerate for at least 2 hours before serving to allow the flavors to blend and develop.

Taste before serving and adjust lime juice or seasoning if needed.

SERVING SUGGESTIONS:
