Pomegranate-Glazed Chicken with Rosemary and Garlic

This savory-sweet pomegranate chicken is an easy fall dinner with enough polish for company. The glaze combines pomegranate juice, pomegranate molasses, honey, garlic, and rosemary, creating a glossy sauce that is tart, gently sweet, and deeply flavorful.

Serve it with roasted squash, mashed potatoes, farro, or a simple green salad for a beautiful seasonal meal.

INGREDIENTS:

4 boneless, skinless chicken breasts or 6 boneless chicken thighs
Kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
2 cloves garlic, finely minced
1 teaspoon finely chopped fresh rosemary
1 cup pure pomegranate juice
1 1/2 tablespoons pomegranate molasses
1 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon unsalted butter
Fresh pomegranate arils, for garnish
Fresh rosemary leaves, optional

METHOD:

Pat the chicken dry and season generously with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until well browned on both sides and nearly cooked through. Transfer to a plate and set aside.

Reduce the heat to medium. Add the garlic and rosemary to the skillet and cook for about 30 seconds, just until fragrant.

Add the pomegranate juice, pomegranate molasses, honey, balsamic vinegar, and Dijon mustard. Stir well, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer and cook until reduced by about half and beginning to thicken, 8 to 12 minutes.

Return the chicken to the skillet and spoon the glaze over the top.

Continue cooking for several minutes, turning the chicken once or twice, until the chicken is cooked through and the glaze is glossy and coats the meat.

Remove the skillet from the heat and stir the butter into the sauce until melted and smooth. Taste and adjust with a pinch of salt, a little more honey, or a splash of balsamic vinegar if needed.

Arrange the chicken on a serving platter and spoon the pomegranate glaze over the top.

Scatter with fresh pomegranate arils and a few rosemary leaves, if desired.

Kitchen Notes

Chicken thighs or breasts?
Both work well. Thighs stay especially juicy and pair beautifully with the bold glaze, while chicken breasts make a slightly lighter presentation.

Make the glaze ahead.
The pomegranate glaze can be made a day in advance and refrigerated. Reheat gently before using.

For a deeper savory flavor:
Add a teaspoon of soy sauce or tamari to the glaze. It will not make the dish taste Asian — it simply adds depth and balances the fruitiness.

For pork or lamb:
The same glaze is excellent with pork tenderloin, pork chops, or lamb loin chops.
