A little freshness goes a long way at a holiday feast. This colorful pomegranate relish brings juicy crunch and bright, tangy flavor to a table filled with rich, savory dishes. Orange zest and fresh ginger complement the sweet-tart arils, while a touch of honey rounds out the flavors. Serve it alongside roast turkey or chicken, or spoon it over soft cheese for an easy seasonal appetizer.
INGREDIENTS:
2 medium pomegranates, seeded (about 1½ cups arils)*
1 tablespoon finely chopped orange zest
1 tablespoon fresh orange juice
1½ teaspoons grated fresh ginger
1 tablespoon honey
¼ teaspoon salt
METHOD:
Place the pomegranate arils in a small mixing bowl. Add the orange zest, orange juice, ginger, honey, and salt. Stir gently until evenly combined, taking care not to crush the arils.
Taste and adjust the honey or orange juice as needed to balance the sweetness and tartness of the fruit. Serve immediately, or cover and refrigerate until ready to serve. Stir gently before serving.
SERVING SUGGESTIONS
Serve alongside roast turkey, chicken, or pork as a fresh alternative to cranberry sauce. For a simple appetizer, spoon over goat cheese or cream cheese and serve with crackers.
