Peach Cobbler

When summer peaches are in season, you’ll want to make this all summer long. While you can also make this dessert with canned peaches, we far prefer fresh peaches!

INGREDIENTS:
4 cups fresh peaches, skinned and sliced
2 tablespoons sugar + 1 cup granulated sugar (divided)
1/2 cup butter, room temperature
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Pinch of nutmeg (optional)
1 large egg
1 teaspoon vanilla extract

METHOD:

Preheat oven to 350°F. Mist a 2-quart baking dish with non-stick spray.

Spread sliced peaches out in an even layer in the baking dish. Sprinkle 2 tablespoons of sugar over the peaches. Set aside.

In a large mixing bowl using the flat blade of a stand mixer (or a hand mixer), beat 1 cup of sugar and soft butter together until combined. Add flour, baking powder, salt, and nutmeg and mix to combine slightly. Then add the egg and vanilla. Continue to mix ingredients together until just combined. The batter will be thick like cookie dough.

With a spoon, place dollops of batter over the peaches. Using a spatula, carefully spread batter over the tops of the peaches, spreading it evenly to cover most of the peaches. (You can also use your hands to make it easier.)

Bake for 35 to 40 minutes or until the crust is golden brown. Remove from oven and let stand 5 to 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
